Today we’re gonna be cooking my favorite thing in the world. Yeah, We’re gonna cook baby back ribs dry. Of course that is Memphis style, what we’re known for.

First we’re gonna start by making our driver. Now these are 2.75 loin back ribs and what makes them a loin back rib is this triple loin. That goes across to the top now. I’m not gonna do a whole lot of trim work to these, because these are for my family now when you’re cooking for a family. I thought I’d be good at playing the piano, you know where I am not, I’m really good at taking the membranes off ribs. That’s all you got to do right there. It is all off in one piece now, if you don’t have these long skinny fingers that I have feel free to get you a paper towel.

Pit Boss Three Cheese Italian Crescent Roll

The Recipe:

  • ½ cup whipped cream cheese (as a substitute for regular cream cheese)
  • 2 Tbsp sugar
  • ½ tsp lemon juice
  • ¼ tsp vanilla extract

Pit Boss Chocolate Peanut Butter Cookies

Today we’re gonna be making these dreamy, decadent, but super easy peanut butter chocolate chip cookies. They have the perfect amount of everything. They’re basically fool-proof. And I don’t know if you can see, but there’s this sparkle of giant flakes of sea salt on top and. it is making all of your cookie dreams come true. You gotta believe me on this.

Let’s get started to the Menu. First off, we’re gonna sift the dry ingredients starting with 2-1/4 cups or about 270 grams of all-purpose flour. There we go. 3/4 of a teaspoon of baking soda. I’m adding in 1/2 a teaspoon of salt now, but we’re gonna garnish this cookie with beautiful flakes of sea salt at the end, so you will get a nice, salty finish. Sift it up (upbeat music) and give it a quick whisk.

Okay, now we can set that aside and get onto the butter, and peanut butter, and all that gooey goodness. Into the bowl of my stand mixer fitted with the paddle attachment I’m adding in one cup, which is two sticks, or about 230 grams of unsalted room-temperature butter. In you go. Cream it up for like a few seconds. Now we’re gonna add in a cup and 1/2 of smooth peanut butter.

It’s quite chewy and it doesn’t cook down so here’s what you do. I’ll still cook it up and snack on it but I  don’t want to leave it on the breast.
